A simple base for two servings
- 1 cup rolled oats;
- 1 cup milk, unsweetened soy beverage, or another drink you enjoy;
- 1/2 cup plain yogurt, optional;
- 1 apple, diced or sliced thinly;
- 1/2 teaspoon cinnamon and a small handful of walnuts or pumpkin seeds;
- Optional: 1 tablespoon chia seeds or a little maple syrup.
Three minutes at night, one less decision in the morning
- Stir the oats, drink, yogurt, cinnamon, and chia seeds if using;
- Cover and refrigerate for at least four hours or overnight;
- In the morning, add apple and nuts, then adjust with a little sweetness or acidity if you like.
If nuts are an allergen, use pumpkin seeds or leave the topping out. If you do not use dairy, choose an alternative you enjoy. For make-ahead storage, follow the directions on your ingredients; if the smell or condition leaves you unsure, you do not need to force yourself to finish it.
