Ingredients for two

  • About half a cup of millet, rinsed;
  • About one cup of small pumpkin cubes;
  • One cup of already cooked shredded chicken;
  • About four cups of water or lower-sodium broth, plus ginger and scallions if you like them.

Method

  1. Bring millet, pumpkin, and water to a boil, then simmer gently until the millet and pumpkin are soft.
  2. Add the already cooked shredded chicken, warm it through, and season in your own usual way.
  3. Spoon into bowls and finish with scallions. For a thicker texture, let it cook a little longer.

You can replace chicken with tofu or another cooked ingredient you enjoy. If there are leftovers, divide them into shallow containers and refrigerate promptly according to food-safety guidance. That can make tomorrow's lunch feel easier too.
