Add water or clear broth to a pot and simmer the mushrooms first.
Add rice noodles, then add shrimp and greens when the noodles are nearly done. Beat the egg and pour it in, stirring gently.
Season lightly with salt, pepper, or soy sauce, and finish with scallions. Add a small serving of fruit and water on the side for a more complete meal.
Two small reminders
First, do not remove the staple food completely. Soup and vegetables alone may leave many people hungry again soon.
