Ingredients

For 1 serving:

  • 1 small bundle of soba or other noodles.
  • 1 tomato, chopped.
  • 1 egg, beaten.
  • 100-150 g tofu, cut into small cubes.
  • A handful of greens, such as spinach, bok choy, or lettuce.
  • Seasoning: a little soy sauce, pepper, scallions, sesame, and optional vinegar.

8-minute method

  • Add water to a pot and simmer the tomato until the broth turns red.
  • Add tofu and simmer gently for 1-2 minutes.
  • Add noodles and cook according to the package.
  • Pour in the beaten egg, add greens, and stir gently.
  • Season with a small amount of soy sauce and pepper. Finish with scallions and sesame.

For an easier version, use pre-cooked noodles. For more staying power, increase tofu to 200 g or add fruit on the side.

Tomato and greens add volume. Egg and tofu provide protein. Soba or other noodles provide the staple carbohydrate. This is not a bowl designed to be as tiny as possible. It is a more complete ordinary meal.
